
I *do* love that song and I *do* love to travel. I travel light, however, and so packing is not a big deal. Ever since my body turned into an apple with boobs I don't have much interest in fashion. The only role model I have is the Fruit of the Loom guy. Anyway, I thought I would post a recipe for Banana Bread and give you a chance to make it while I am basking in the California sunshine.
This recipe is my Mother's and it has always seemed different from other B.B. recipes; more moist and cake-like. Since I haven't made the bread yet ( maybe tomorrow to leave for Bob) I am borrowing this picture from Kim at Dear Daisy Cottage with her permission. I am sure most of you know Kim with her fantastic yellow bungalow and her newfound Contributing Editor gig at Romantic Country.
Ruth's Banana Bread
1 stick margarine ( I use butter)
1 1/2 c. sugar
2 eggs
3 c. flour
2 t. baking soda
1 t. salt
1/3 c. milk
4 overly ripe mashed bananas
Cream butter, add sugar and beat well ( it won't really cream well), add eggs and beat a minute or two until light. Add baking soda, salt and half the flour, add milk and bananas, mix well and add the rest of the flour. Bake in a greased loaf pan ( I use a tea bread pan that is longer and narrower than a regular loaf pan) @ 325 degrees for about 75 minutes. You can also use this batter to make muffins. Bake the muffins at 375 for 20-25 minutes, depending on size. Enjoy this very moist and sweet treat.
In other news, I had an e-mail from Martha @ Elizabeth Hill Cottage inquiring about Sophie. I hope you all know Martha. She is a Food Stylist, or something related to that who lives in Minneapolis and she is very funny. She has a husband named Zuddy and a daughter named Noodle, you know it is Minneapolis after all where they have General Foods and Kraft and all those big food entities. Why not name your child after pasta?? Anyway I digress. Sophie is doing fine. She is still a big skittish when downstairs ( is this another "land"?) and doesn't really socialize much with the other cats, but she sleeps in our bed and always sits on the couch with me to watch TV. She remains rotund ;-)
